How do I remove the oil filter when it's been wound on too tight? I've punched a few holes in it with a screwdriver but it won't move and there's not much room underneath the car for me to get both hands in and manually unwind it

Use a long rod and punch near the base, just off the ridge of the filter for more leverage. Otherwise you would need a chain type oil filter wrench.

You can get oil filter removal tools from all spare shops, go and look at the options end grip types are normally the best option.
