I have a problem with my temp gage and cooling fans can you help me?

I replaced the lower intake gaskets on my car. Now my cooling fans won't come on unless I unplug the cooling temp senser and when I plug the senser back up they go off. The temp lignt comes on when the car is running and the temp gage doesn't move but when I turn the car off the temp gage moves up. Could you posibly tell me what I can do to fix it?

Ensure the coolant level in radiator is correct and there are no air trapped in system. If level is correct, replace the temp sensor.

Ensure ground circuits have been installed correctly and secure.

I have replaced the sensor and I have checked the ground circets already and it still does the same thing

Which engine do you have?
Do the fans comes on when the A/C is turned on?
