Toyota Pickup Exhaust Problem

I am looking to get my vehicle serviced but I'm not sure what I need to tell them to look at.
1- My vehicle has varying acceleration. Sometimes it accelerates rapidly, and other times it is very slow.
2- I would like to do some repairs that would help with MPG performance. Suggestions?
3- My vehicle is automatic. Sometimes it shifts gears faster or slower at the same rate of speed. Normal?
4- Sometimes on start up, white smoke comes out of the exhaust but not during the drive. Is this an issue?

5/6- Would it be better to rebuild or replace a motor/transmission. What are the costs?
