2001 Volkswagen Jetta temp reading from fahrenheit to celsi

Hello, when I bought my jetta it was originally telling me the temp outside in Fahrenheit and also I have climate control for the inside of my car and it would read the temp in fahrenheit. One day when I started my car both temps are reading celsius and I cant find anywhere in my owners manual where I can change it back to Fahrenheit! Do you know how? ALSO while I am on here. And since I am asking experts here.I started noticing a high pitch noise when I push on the gas pedal. But as soon as I let off it. The noise stops! What could this be? Thanks!
