Could the thermostat cause low coolant light to come on?

no, the level if low is due to a leak. you can have it pressure checked and find it, but it may be a head gasket problem. It could also be a bad switch/sensor for coolant level If full.

i agree, check for coolant loss and also a faulty sensor, have you been topping up the coolant at all?
