Hot running engine

I flushed radiator, refilled with 50/50 anti-freeze-coolant and put in new thermostat. The temperature gauge goes up to the red after about two miles and goes back and forth between the red and about half (twelve o'clock position. When I turn car off there is a gurgling, bubbling sound. Also, when driving uphill, there is a thumping noise under the hood. What is up?

All the gurgling, thumping noise means it is overly hot and very dangerous to open the system up until it cools down. It may be a thermostat heating up that quickly but as it is been replaced I doubt it. When it cools down pressure check for a blown head gasket or maybe a cracked head especially heating up that fast. You can also chemically check it but I think the pressure check will show it.
