Why dose my a/c change from the vents on the panel to the defroster when I excellarate up to speed the changes back to the vents?

Because the mode actuators are all controlled by engine vacuum. Most times the vehicle has a vacuum canister which helps maintain door position regaurdless of throttle position. It may be possiable the canister was removed and hvac actuators are just getting direct vacuum. Check routing and diagram of vacuum system. Usually the digram is printed under the hood.
