1994 Chrysler

This question is regarding my 1994 Plymouth Acclaim, 4 cylinder, automatic, 218, 000. I replaced the radiator and thermostat+housing, and flushed the cooling system. For some reason the car temperature guage when started hits all the way to the H and then cools down quickly and rises again, but never goes past its normal operating temperature. I was thinking that the sensor might be buggy, I took the car to Chrysler and they couldn't find anything wrong with it. Any Ideas?

There is no steam coming out or anything, and the coolant levels are good. It seems like the sensor needs to warm up or something before operating propertly.
