2005 Chevy Silverado high temp and heat not working

My truck normally runs at 200-210. The temp has been reading high (235) but often varies and will go as high as 250 but will then return to 210 stay there for awhile and go back to 235. While the temp is reading higher than normal the heat doesnt work. Then when the temp returns to 210 the heat kicks in. What is the problem

Sounds like air in system? Interrupting heater flow. Raising temp in head.
