My car is hard to start if it hasnt been started that day.
The engin cycles started jumping to zero when im driving but jump back to normal making th car shake, this usualy only happens a second or two.
Soon after the fisrt time it started jumping it died.
When I drive at low speeds or go to slow down it dies.
When it dies I still have power to the headlights, the dashboard and radio, but the power steering goes out.
I was driving on the highway and it started loosing power. It could only go 45. I pulled over and restarted the car and it had its power back.

I dont know whats wrong with it, what I should be looking for or how to fix it.

Have you checked the Idle Air Control Motor on the throttle body? I would check it, unplug the connector from it and unscrew it from the throttle body and see how much carbon built up is on it and in the throttle body itself where the IAC was screwed in at. Do not push on the tip of it and push it back in. Let me know what you find and we will take it from there.
