When I check my tranny fluid when the engine is cold, it registers way over the "hot" line. When I check it with the engine hot, it barely registers on the dip stick. Any idea why?

Hmm. When checking the fluid level, you should always run the gears from lowest low to park before checking, with the engine running. If you are either checking the fluid level without the engine running, or checking it right after startup in the morning without having running it through the gears, you may get erroneous readings. Other than that, that one is a stumper to me.
