1988 Buick Century overheating

Hello guys,
I have replaced the radiator because of visible blockage, the water pump because of leaking, the thermostat for s&g, replaced cap and flushed the system.
I have bypased the fan relay (because the fan does not come on)by jumping power to the big yellow wire.
fan comes on so I replaced the relay.
Later I found the fan still does not turn on, unless the a/c is on.
Just overheated today at a drivethru Temp light came on and fluid boiled over to resevoir, can you advise before I crack the head? Is there more than one relay? Can I get a schematic and sensor location?
