The temperature gauge on the dashboard goes up and down but never over where it should be meaning it never overheats or goes above 180 at the same time the needle shoots from `180 to 100 the engine seems like it surges or jumps and then seems to want to stall if I am at a stop. We were told it could be temperature control sensor going bad?

Sounds like a low voltage issue more than anything. Have the battery cables checked for corrosion and loose connections. Check the alternator.

It could be a bad sender but I doubt it. It is either good or bad.

Make sure the coolant level is ok and the thermostat is working.
