My 98 Jaguar runs hot while driving but not while idling

If you haven't figured it out yet, you probably have the original plastic water pump impeller and it's melted somewhat. A replacement water pump is your only option, but it'll come with a metal pump impeller and will probably out-last the rest of the car.
