COOLANT IS LEAKING BY THERMOSTAT

Why would a car leak coolant on one occasion and stop leaking until after the overflow, coolant only container refilled to its appropriate level. The car runs fine and there is no warning lights or steam from the engine until after the leak starts. I looked at it and saw coolant dripping on the engine close to the thermostat, but it does not appear that the leak is actualy coming from the thermostat. But maybe somewhere very close.

Go get a cooling system pressure test done, this will help positively identify the actual leak.

You probably have either a bad Intake manifold or manifold gasket but the pressure test, as suggested, is how you find out.
