The clutch yesterday on this truck was stiff and I thought it was just me being weak or something. On the way home yesterday my boyfriend was driving and he came to a stoplight and pressed the clutch and it fell right to floor causing us to not be able to drive. We checked hydraulic fluid and springs and its just not making since as to why something like this would happen.

If the fluid is ok see if the slave by the clutch is working. Or if the release arm is stuck to the rear. Your clutch may have worn out or the master/slave cylinder is bad.
