1994 Pontiac Grand Prix Trapped air?

I recently changed the water pump and thermostat, re-filling the radiator with the vents on both the water pump and thermostat housing open, As the Haynes manual suggests. The engine seems to have air trapped in it. Upon the initial startup it overheated without the thermostat opening. I shut it off and opened the bleed screws, which allowed steam to escape. Now while driving the temperature fluctuates between 195-215, but when sitting at a stop light the temp continues to rise. Is this still trapped air, and if so how do I remove it?

Try this: with car running, turn heat on high and remove radiator cap and let the coolant bubble up for several minutes until it stops. Then turn vehicle off let cool and put cap back on. Let me know how it goes

Your gonna let it run with the cap off for approx. 15 minutes. After all is done top off what ever came out and recap
