'96 Infinity/Nissan engine stalls, code P0125

I have a '96 Infinity I30 (same engine as Nissan Maxima) w/ ~150,000 miles that has been stalling regularly while driving. It usually occurs when I am coming to a stop and have let off the gas. It never occurs after the engine has completely warmed up, it usually occurs soon after I have started driving. Then the car either cuts out completely, or the RPM's fluctuate up and down like it is starving for gas and then either recovers or stalls. The engine code P0125 "insufficient coolant for closed loop fuel control" comes up. It has been reset and has come on again. The thermostat has been replaced and I am about to replace the coolant temp sensor, but it doesn't seem like just the sensor would cause the stalling. Usually it starts up fine, but occasionally is takes several minutes and lots of cranking to get it going. Any ideas/suggestions would be appreciated. Thanks!

Actually the coolant sensor can do things like that. Part of fuel control is knowing what temp the engine is at, if the coolant sensor is out of range then the PCM may think the engine is warm when it is cold, which would give a lean mixture
