Jeep Wheel Overheating

1999 Jeep Grand Cherokee 85k miles.
On a long trip involving some stop and go driving, I sometimes get a strong burning smell from my front passenger side wheel. The wheel is too hot to touch. After 20-30mins of cool-down, I can resume driving without a problem.
The brakes only have 12k miles (pads & rotors), it only happens occasionally, and it is only the one wheel.
I have brought the car back to the brake shop twice and they cannot find a problem. They told me to bring it in when the problem occurs - not easy to do when you are out of town.

Any Suggestions?

one of two things, either the brake calipar is defective and is applying enough pressure to engage the brakes just slightly so it always has friction from the pads, the easiest way to tell is see if they are wearing down quicker than the other side. the other thing that will cause this is the wheel bearrings.
