2004 GMC Envoy Check Engine Light

My vehicle has had the check engine light constantly going on and off for the past 2 years. Im not sure what the code # is but auto zone and several other places i have had check say the same thing. Its either the coolant temp sensor or thermostat. The dash gauge always stays at 210 and does not budge. Never had any problems. How do i know which one needs replaced? i really dont want to start replacing parts that dont need replaced until i figure out which one is broken. i wouldnt even worry about it because the car runs fine like it is supposed to and i have never had a problem, but my check engine light is now constantly staying on and it wont pass inspection with the light on. Better yet, how can i just get the check engine light to go off long enough to get my car inspected? i dont see fixing something when noting is even wrong and it not even hurting the car.
