2001 Ford Ranger Cooling Issue

About every third use, an unusual thing happens. Dash temp. gauge will lie flat at 0 for a long time, even with heat in the passenger compartment. All of the sudden it will spike to high, chx engine light comes on, and after about five sec the gauge will normalize and then be okay for a use or two. Once in a while the pass. comp heat flow will fluctuate during this process, but not everytime. Recently did complete coolant flush, all levels are good, problem still persists. Not sure what the next step is...engine isn't overheating, heat in the pass comp except during this "event." Suggestions?
