Unstable Oil Pressure

I have a 1997 Ford F-150 V6 186K miles. The oil pressure has become very unstable. When I am not on the throttle, the oil pressure drops dangerously low. As soon as I am back on the gas, oil pressure is back to normal. Or I can put it in neutral and the pressure is back up. The oil pump is less than a year old. Whats the problem?

Lower intake gasket failed and let water into cylinder 5. Did a full rebuild and replaced the oil pump while I had the motor out.

I could not find a mechanical oil pressure gauge to use. I went ahead and picked up the sending unit since it was only $10. Where is is located?
