2005 Ford Escape Long trips/car dies out

My 2005 Ford Escape has recently starting doing something odd. During highway trips (usually 30-minutes or longer), after I exit and come to a light/stop, my Escape stalls out and dies.
After couple of minutes, I manage to successfully restart her - and as long as I'm giving her a lot of "juice", she gets going.
This is not a daily problem, since I don't have to get on the freeway everyday. Again, it's the more lengthy trips I may take once or twice a week.
Any insight?

Dont know if you are still on here your bost was years old. I was just wondering if you ever figured out what was wrong with your 2005 escape when it died after driving on highway. Mine is doing same thing and mechanic cant figure it out because there is no light on.
