2001 Dodge Viper Two Wheel Drive Manual 3700 miles

Hello,
my car runs to 250 degrees after I drive it for 15 minutes. The overheat light comes on, and the antifreeze comes out in front of the passenger front tire.I park the car, open the hood to let it cool down, and after aproximately 10 minutes, I hear the hot water start to flow within the system. It seems that the thermostat finally opens and sounds like the water circulates at that time.
Where is the thermostat, and how hard is it to change?
The car only has 3,700 miles on it. The car was in a body shop for replacement of the hood, lights and lower spoiler.
Thanks for your help. Have and make a good day.

According to my software you have to remove the intake manifold to access the thermostat housing. They do sometimes become sticky when sitting for long periods of time like you mention
