Has it ever not restarted for you? Have you checked fuel pump pressure and has the check engine light ever come on?

It should be between 44 and 54 PSI. The fact that the check engine light isn't coming on makes me lean toward the fuel system. However, it could be something like a crank sensor. Let me know what you find with the pressure.

Most likely culprit is the ECT (engine coolant temperature) sensor.
