Problem with my heater

1994 Dodge Shadow 6 cyl Front Wheel Drive Manual 132000 miles
I changed my thermostat and when the temperature gauge goes to the mid line of hot it starts to blow heat. But then the gauge drops to cold or quarter above cold and then begins to blow cooler air. how do i stop my gauge from moving and keep the heat at hot. If someone could tell me how to troubleshoot this problem please let me know!
