baffled on overheating problem

What's wrong with this car?

1995 Lumina 220k on car about 90k on 3.1L engine

This car is running too hot. The temperature gage climbs at or near the red line and then a few minutes later comes back down. When the temperature is coming down, the gage can come down so quickly the needle bounces.

It does this under load and at speed but not so much when it is idle.

The following tests have been run:
--Coolant has been checked for chamber gases twice with none being detected.
--The water pump has been checked.
--System pressure has been checked

The following have been done'
--Replaced the radiator
--Replaced the thermostat twice

From reading the forum it sounds like the problem might be with the intake manifold gasket. What do ya'll think? Is this a difficult repair?

Sorry for the late reply.

How hot is it getting in degrees F? I'd have to check sending unit for the temp gage. Do the radiator fan/s work ok? Some makes and models, the fan won't turn on till about 220 degrees F. Are you losing coolant?

Did you check coolant circulation through radiator? I can't rule out a gasket issue.
