Car over heating

1988 Acura Legend; about 3 months ago my engine was over heating. I changed the heat sensor and it ran fine. Now the same problem is back, the car over heats every time I drive it, the fans never come on. I keep my coolant and oil on full so I hope I have not hurt the engine. Is there any way to fix this problem or perhaps to bypass the thermostat sensor?
