My dealership says there is oil in my coolant, from a gasket leak. I understand it should be fixed. They recommend a gasket replacement and coolant flush. But in the near term, is it a SAFETY issue?

Sounds like the cylinder head gasket has failed, allowing coolant to mix with the engine oil. You can drive the vehicle this way for a short while, just keep an eye on the temperature gauge so that the engine doesn't overheat.
