2000 Cadillac DTS Overheating

I have replaced the thermostat, water pump, and temp sensor, flushed the cooling system and made sure that there was flow thru the block, radiator, etc. Both fans come on too!! If I start the car and let it idle it does not overheat, I can drive only a short distance before I get the Engine Hot AC off message, usually only if the AC is on, if the AC is not on I can drive pretty much normally.
The coolant does not seem to be low even though the check coolant light comes on (only after it gets hot) I ahve checked the coolant level hot and it was good. The heat works good, the car runs great, there are no visible leaks, there is no white smoke out the exhaust, and no coolant in the oil.
Basically the thing only overheats when its under a load.
