Acceleration, RPM limit, Cold start issues

Hello, I have a Nissan 300ZX that doesn't want to rev above 2500RPM. For example, i'll be going over a bridge, and I can't keep up with the cars in front of me because my car doesn't want to pull more power from the engine. It just maxes at 2500-2600RPM. Also, the car doesn't like to start in the cold, and when it does, I have to hold the accelerator (after it turns on) for a little, in order to heat up the engine. And when I accelerate at low RPM (1200-2000) the car likes to hesitate, it gets jumpy.
