97 Bonneville stalls after releasing gas pedal while driving

Stalls while driving, after releasing gas pedal and possibly during braking, won't restart until after it sits a few minutes. Disconnected MAF but still wouldn't start. Check gauge like comes on

If idle issues, check and clean the throttle body and idle air system. Can you check for applicable trouble codes? You would need an obd2 code reader, at the least, to check codes. Some of the national brand autostores will check codes for free.

When it stalls, if it cranks good but start, have a helper crank it while you visually check for spark at the plugs. If spark everywhere, use a gage and check fuel pressure. With intermittent issues, test when the problem is ongoing.

Car idles smooth when running, rpms vary by 200 (from 800-1000), and we don't have a tpc code reader but check engine light doesn't come on

When we try to restart it, it cranks good, just doesn't catch. Seems more like its not getting fuel consistently

Did you check for spark at the plugs and proper fuel pressure when the problem is ongoing?

Another thought, if the tcc locks up at idle it will kill it. If the egr valve opens at idle, that can also kill it. If the vehicle is driveable take it to the local autostore, see if they can check codes. There may not be any? I can suggest some testing, but, you have to do the testing, like spark and fuel pressure.
