2006 Vauxhall Astra coolant

For about a week I have noticedthr coolant is starting to get very warm and bubbling, it's that hot I can't touch the lid or any of the pipes. Open the bonnet and the coolant is all gone then give it half hour and it's back again bubbling and steam is coming out of the expansion hole. Fans wont turn of f until you drive for a couple of minutes but they are really loud when they do come on.

Is the coolant temp light coming on in the vehicle? Is sounds like it is overheating. Tell me this. If you are driving on the highway at higher speeds, does this happen? Or, does it only happen when you are driving slowly in traffic (stop and go)?

If the fans are loud, chances are they are bad or are hitting something. This could be the overheating cause if it only happens in traffic. Let me know.
