2006 Ford Falcon engine cutting out

My engine keeps cutting off when I am driving in the city or somewhere where I have to stop and go but when I am driving on the free way it works fine, but in the city it lasts maybe 25 mins then I have to turn off the motor for 10 mins of it would stop in the middle of traffic and will start but wont stay alive, and also my coolant is leaking and ive checked all the hoses and none of them have cracks and it only leaks when im driving.

Does it shut off when over heating?
Have the cooling system pressure tested. Doing this will force coolant out where it is leaking from making it easier to locate. This requires a special tool to connect to the radiator cap or reservoir pressure cap and has a pump on it to apply pressure inside the cooling system.
Does it shut off at an idle or when driving? If it is at an idle it could be a vacuum leak causing the engine to stall.

The car shuts down idle and when I try accelerate and btw its full factory gas if that helps haha and my temperature gauge is broken hahaha I think it might not be over heating but im assuming it is that because it works fine for a bit then starts playing up after about 45 minutes of continuous driving

It sound like it is overheating. Either there are leaks or the engine is overheating causing a leak. You probably need to take your vehicle to a professional who has the tools to diagnose and rule out issues causing the leaks and engine to stall.
