2004 Mazda 6 Thermostat

Would a bad thermostat cause my engine to idle "up and down" when I first start my car? The colder it is outside the longer it lasts. Eventually it does stop. Car seems to run fine. The check engine light is on. Don't remember the actual codes its throwing, but had to do with low coolant and maybe a sensor.

It shouldn't but add coolant if low and have coolant system pressure checked by a pro for a head gasket leak. For up and down idle clean throttle plate on both sides and iac hole with choke cleaner.
