2002 Honda Civic mileage: 71,000. It has been suggested that we replace both CV boots for our car. Should we not drive the car until this is done? What if we keep driving the car?

If the CV boots are torn and throwing grease, then they definitely should be replaced. If you do not replace the boots and they are torn and you continue driving, it will eventually cause the CV joints to fail.
