Chevy Tahoe, 2002, Z5.3L engine, What could cause it to stall and die on acceleration?

Car stalls and dies on acceleration, initial scan showed Knock and O2 sensor malfunction and low catalyst threshold. Replaced Knock and O2 sensors ( all of them), also replaced wiring harness for knock sensors. I have also changed spark plugs. Car starts and runs fine in the mornings. But after driving a few times, it begans to stall and die on acceleration. After it dies, it will crank and run after sitting 15-30 minutes. Runs fine untill it stalls and dies again. Check engine light was on constantly initially, but is off after sensors were replaced. Scan now shows no DTC's, but on the emissions control the light is yellow and the screen flashes CAT, EVA, and O2S.
