Nissan Quest Alternator Problem
What could possibly burn the alternator

Do you mean there were flames or smoke coming out of it? Did the output terminal overheat and burn away? AC generators are self-regulating as far as current output goes, and you can't get more current than it was designed for. You will destroy the diodes if you connect the battery cables backward.
