After replacing my water pump on my Cavalier my water temp plunges to 260 when I accelerate.

Does it go to normal when you are not accellerating? Are you sure all air pockets are out of the cooling system and it is full? Also, have you checked to make sure the wiring to the temp sending unit is properly attached and not damaged?

Yes when not accellerating water temp is normal. However when I'm a mile down the road coolant begins coming out from resevoir tank with temp at 260?

It sounds like it is overheating. Make sure you bled all air from the system. Check to make sure no hoses are crimped.
