2000 Bonneville cough sputter dies

2000 pontiac bonneville se drives beautifully. We have replaced intake manifold, fuel filter, thermostat, plugs, wires, water pump, pcv valve and still the car goes to 212 degrees and then eventually hesitates, coughs, sputters and dies.

what are we missing?

If it has no problem starting up when it dies out-I will check and monitor the fuel pressure to rule out a failing fuel pump if okay next one will be the ignition switch could be breaking open when it heats up
