You have to understand, you may have overheated the engine. Was there ever a point when the temp showed it was too hot?

No it never did which I thought was wierd but maybe the water was frozen around the temp gauge. The truck will run fine at an idle and with gradual acceleration but any more than gradual the motor is cutting out but I just don't know how it freezing would cause the motor to now be missing

It really matters how badly it froze. If it was bad enough, water expands when it freezes and can crack a head, block.

At this point, I feel it would be a good idea to check engine compression to see if there was damage done. If there is a head gasket issue, cracked head or engine block. It will cause a miss. Please understand, that is worst case. I need to know the compression readings before I can be sure.
