Possible leaking head gasket. Your mechanic can test for that with a special tool at the radiator. It is a glass cylinder with two chambers partially filled with dark blue liquid. If the liquid turns bright yellow, the head gasket is leaking or the head is cracked.

If the thermostat is sticking closed, the engine will overheat. You would know that by the warning light or gauge on the dash.

If you remove the radiator cap when the engine is still cold, then water bubbles out as soon as you start the engine, you know it isn't hot yet, so that just leaves the head gasket or cracked head as suspects.

Did someone remove it? All engines have a thermostat from the factory. Without one the engine won't get up to normal operating temperature.
