1976 Ford F-100 Repair Question

I have a 1976 Ford F100. How does it run hot with water in the radiator?
IT hasnt been running hot. Until 10 minutes ago it makes a noise but it has water and it doesnt smoke.

It will run hotter with water in it. It has a lower boiling point than antifreeze
