Water temperature meter

We have Acura Vigor GS 1993.Mileage107000
Automatic transmission.
Water temp remains steady for about 15 miles running.After running of 15 miles water temp goes up and after few seconds it comes down remains steady for some time.Afterwards occasionally temp goes up and down.
We changed water temp sensor-but it has not helped. Can you suggest what is the problem?

Did you changed the thermostat? This is the one that controls the engine temperature.
