Engine Cooling problem

Hi. My engine is a 2.7 and the temp gauge goes all the way to hot then drops. I live in FL but tested the heater while driving and the heat works on and off not continious. I noticed a leak while the car was running. I turned off the car and realeased the pressure from the overflow cap and the leak stopped. Could this be my thermostat or the water pump that is no good? I was going to replace the stat myself until I found out what a job it would be so I don't want to do that if you think that is not the problem. Thank you....Scott
