Engine Cooling problem

Lets see, where do I start? Well the van is a 1999 Dodge Grand Caravan, 2WD, 3.8L Engine. On this engine is a Bypass Hose that starts at the top of the Water Pump Housing and runs about 10in-12in up to just below the Thermostat Housing.
I believe the Fitting on the top of the Water Pump is Pressure Fitted (Heated then slide in the hole then cooled during manufacturing to create a bond in the two metals) unlike the top one which has Threads. Mine broke off level with the top of the pump due to normal wear and tear.
I cant find the Water Pump Housing anywhere. I wont try a Junk Yard because I have to pull the part, and to do it twice would suck, and to put it in the shop would probably cost more then the van is worth.
So i have two ideas and looking for more. Here are my questions:
1. Can i pull the Pump and Tap with a 3/8's Tap then screw a 3/8's thread to 5/8's hose nipple in it?
OR
2. Plug the hole on the Water Pump and the one below the Thermostat Housing, and possibly remove the Thermostat if it starts to overheat.
