Transmission problem

I have a 2004 audi all-road and I've run into a confusing problem for me. I've had to replace the clutch on this car 2 times in the last year. The mechanic at the dealership blamed it on my floor mat, he said the clutch wasn't fully disengaging because the mat wouldn't allow it to, but i knew the friction point was well before the pedal hit the mat. regardless i allowed them to fix it again. Now, on my second new clutch, the car doesn't consitantly shift smoothly and if i quickly disengage the clutch my engine will rev up 200-1000 rpm depending on how hard i'm driving it. It does this without my foot anywhere near the gas pedal. I am fully confused. I appreciate you guys taking the time to help me out. happy holidays
