Engine Cooling problem

Hello, I have a 95 GMC Sierra with a 5.7 Liter V-8. I have been having an ongoing problem with my Engine Temp. I will start the vehicle and the temp will rise up to 260 degrees after about 5 minutes f running. The temp will then drop to normal but then rise back up periodically. I have replaced the Thermostat 2X, both Radiator hoses, the Engine coolant temp sensor, and the radiator has been flushed with in the last 6 months. None of these have fixed the problem. Can you help me out with some advice? I have checked temps of the block and around the sensor with a temp gun and no where does the temp gt over 200 degrees. Do I have a faulty gauge?
