Engine Cooling problem

I have a problem with my legacy (liberty), I am currently running it without a thermostat as it overheats within 15 mins of using a new thermostat even with coolant. what would i need to check to diagnose the problem as I am at a loss with this. the motor size is the 2.2 ej22 motor in it and right now I am leaning towards a cracked head allowing air into the system causing it to boil. before I pull off the heads and rebuild the top end so to speak what else could be causing the problem. (I have just replaced the water pump and the fans and radiator are all good)
